Ingredients:
- 250g paneer (cottage cheese)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/2 cup yogurt
- 1 tsp ginger-garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/4 tsp garam masala powder
- 2 tbsp oil or ghee
- Salt, to taste
- 2 tbsp chopped fresh coriander leaves
- 2 tbsp cashews (optional)
- 2 tbsp raisins (optional)
Instructions:
- Cut the paneer into thick slices and shallow fry them in a pan until they are golden brown on both sides.
- In a separate pan, heat oil or ghee and sauté onions until they turn golden brown.
- Add ginger-garlic paste and fry for a minute.
- Add tomatoes and cook until they become soft and mushy.
- Stir in cumin powder, coriander powder, red chili powder, turmeric powder, and garam masala powder. Cook for a minute.
- Add yogurt and stir well. Cook for 2-3 minutes.
- Add the fried paneer slices to the mixture and gently toss to coat the paneer with the masala.
- If desired, add cashews and raisins.
- Cook for 2-3 minutes or until the paneer is heated through.
- Garnish with coriander leaves and serve hot with rice or naan.
