Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions:
- In a medium-sized mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another mixing bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
- Pour the wet ingredients into the dry ingredients and gently stir until just combined (small lumps in the batter are okay).
- Heat a non-stick pan or griddle over medium-high heat. Once hot, ladle about 1/4 cup of the batter onto the pan or griddle for each pancake.
- Cook until bubbles form on the surface of the pancake and the edges begin to look set, about 2-3 minutes.
- Flip the pancake and cook for an additional 1-2 minutes on the other side.
- Serve with syrup, butter, and your desired toppings.
