How to Make Mouth-Watering Turkish Stuffed Eggplant

   Ingredients:

  • 4 large eggplants
  • 1 lb ground beef or lamb (for a vegetarian version, use diced mushrooms or tofu)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 large tomato, peeled and grated
  • 2 tbsp tomato paste
  • 1 green bell pepper, diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried mint
  • 1 tsp paprika
  • 1 tsp red pepper flakes (optional)
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 cup parsley, chopped
  • 3 tbsp olive oil
   Instructions:

  1. Preheat oven to 400°F.
  2. Cut the eggplants lengthwise and scoop out the flesh, leaving a 1/2 inch border around the skin. Chop the scooped-out flesh and set aside.
  3. In a large pan, heat the olive oil over medium heat. Add the onion and cook until soft and translucent.
  4. Add the ground beef or lamb and cook until browned, breaking it up with a wooden spoon.
  5. Add the chopped eggplant flesh, green pepper, garlic, tomato paste, grated tomato, salt, black pepper, mint, paprika, red pepper flakes (if using), cumin, and cinnamon. Cook for 10 minutes or until the vegetables are soft.
  6. Stir in the chopped parsley.
  7. Fill the eggplant skins with the meat mixture and place them in a large baking dish.
  8. Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes or until the eggplants are tender and the tops are lightly browned.
  9. Serve with rice or bread.
